Filleted or gently poached as a whole fish in white wine, it is served with a herb sauce cooked from the stock with rice or boiled potatoes. But only for a few weeks from mid-November, when the redfish catch is released by the cantonal government. During this time, various specialized restaurants around Lake Zug and Lake Aegeri offer rudd on their menus.
